WHY WHOLE FOOD VITAMIN C?

My first answer is, because that is how God designed it and we can’t improve on God! Vitamin C is a complex molecule comprised of many parts. Think of whole food vitamin C like a car. It has all sorts of parts from transmission to brakes, washer fluid, tires, radio, and of course the pretty part, the exterior frame and paint. Most vitamin C products on the market are just the “outer shell” of the car instead of the entire care, the whole, complex vitamin C molecule. The ascorbic acid plays a vital role, but it is not everything.  There can be some benefits associated with ascorbic acid, but without the rest of the entire molecule, just like the rest of the insides of the car, you won’t get the complete benefit and like most everything else that man starts to tinker with and modify from God’s original form, there can be some negative, unintended consequences. 

Humans have a pretty good track record of focusing on just one part of God’s design and trying to gain all the benefits from focusing on just this one part.  Such is the case with just focusing on ascorbic acid instead of the whole molecule of vitamin C.  Without a deeper understanding and respect for the intricate design of both the nutrients God intended for our bodies to consume, and also for the design of the body itself, we run the risk of short term gain in one part of the body or with one symptom but long term dysfunction in some of other part of the body.

Two of the most important things that have been discovered about ascorbic acid vs whole food vitamin C:

  1. Ascorbic acid consumption by itself will cause an uncoupling of copper from ceruloplasmin, a very, very
    important protein in the body.  When ceruloplasmin lacks copper, then the ability of that protein to harness,
    regulate and chaperone iron is lost.  Unchaperoned iron wreaks havoc in the body and is arguably the number one
    cause of oxidative stress and inflammation (the root cause of just about every disease) in the human body.
  2. Whole food vitamin C contains copper in a form the body can utilize. Copper and iron are the only two
    minerals in the body that can react with oxygen. Iron, in it’s appropriate place and chaperoned appropriately, is like a
    taxi driver delivering oxygen via the red blood cells to the rest of the cells of the body in order for those cells to use it
    to make energy. Copper is the mineral inside the cells that takes the oxygen from the taxi driver and activates it or
    uses it appropriately to make energy in the cell. This bioavailable form of copper that is found in whole food vitamin C
    is essential for both the proper chaperoning of iron and also for the ability to turn oxygen into energy in the cell.
    I’ll be the first to admit that we don’t have a full understanding of all the benefits of the entire vitamin C molecule, but
    I’m always going to err on the side of trusting God’s original design, whether scientific studies have figured it all out
    yet and proven it, or not!  Unintended consequences occur when humans, without a complete understanding of God’s
    design, jump to conclusions and start trying to micromanage human physiology.  So, trust God’s design.  Eat your
    vitamin C.  When your food is deficient in it, then supplement with concentrated, whole food forms of vitamin C like
